The Steps

  1. Preheat oven to 450 degrees
  2. Cut the chicken in half and arrange chicken skin side up on roasting pan
  3. Combine butter, lemon juice, oregano, rosemary, sage, salt and pepper in a small bowl and mix well
  4. Brush the chicken with butter mixture
  5. Roast until juices run clear, about 20 minutes
  6. Broil 6 inches from heat for 3 minutes
