The Ingredients

The Steps

  1. Combine first 5 ingredients. Reserve 1/4c of marinade; place remaining marinade in a zip-top plastic bag. Add chicken to bag; seal. Chill 4 hours.
  2. Heat a grill pan over medium high heat. Coat pan with cooking spray.
  3. Remove chicken from bag; discard marinade in bag.
  4. Sprinkle chicken with 1/2tsp salt and pepper.
  5. Add chicken to pan; baste with 2tbsp reserved marinade.
  6. Cook 6 minutes.
  7. Turn chicken over; baste with 2 tbsp reserved marinade.
  8. Cook 6 minutes.
  9. Combine rice, 1/4tsp salt and cilantro.
